What's for Dinner, Thurs., Oct. 17, 2024

Minestrone soup, which is has been going in the slow cooker for hours. It has chopped tomatoes, carrots, tiny filet green beans, pinto and garbanzo beans, marjoram. Grated parmesan. I used chicken stock and Better than Bouillion.

I made gremolata with oregano, lemon, and garlic cloves.

Pumpkin-raisin muffins.

Leafy green salad with arugula and red tip lettuce, cucumbers and tomatoes. Red onion.

Cherry kombucha.

I used some of the taco chicken I made yesterday, avocado, pepper jack cheese, fresh sweet onion, ranch dressing, cayenne pepper in a flour burrito shell.

I had some ice cream earlier. I'll finish the avocado later.

In a Dutch oven: a layer of small yellow potato rounds, and then repeated layers of thin-sliced cabbage, Italian sausage sweet+hot, chopped leeks, apple slices, a bit of salt and lots of black pepper. Dotted with a few butter chunks, and splashed with a few ounces of white wine. Almost everything in it is from a farm nearby.

In the oven (325°) for a couple of hours…the house will smell heavenly, and I wish I’d started it earlier.

Meanwhile, I will have a Moscow mule and check out the baseball game.

My wife is traveling, so I’m going full-fat with a recipe. 😋

On our way home we stopped at Suzie Q's and got their famous tenderloin sandwich. We like eating here, but it closes right after the Bridge festival and reopens late Spring.

I had the breaded pork tenderloin with fries and soft drink. Loretta had the same but not breaded. They need bigger buns, but I'm not complaining.

I'd give anything for one of those sandwiches! Wow, delicious looking.

The covered bridge event sounds like fun.

I see a little tavern I believe in Mecca, Indiana that has an even bigger pork tenderloin sandwich. I told Loretta we're gonna have to eat there sometime.

mixed with steamed onion, zucchini, red bell pepper, mushrooms, kidney beans and chopped garlic. Then tossed with red lentil rotini. Sprinkle with my vegan grated “parm” (essentially nutritional yeast and dried herbs) and ready to go!
Fresh iced green tea with lemon. Easy to make and tasty
