Crispy chicken fingers. The two sauces are honey mustard and hot and spicy orange sauce.
Tossed green salad with Caesar dressing. Cherry tomatoes, Persian cuke, green and yellow peppers, .
Dessert: Cantalope and cold iced tea (it's 78 here ! )
Late night treat might be a cup of rocky road ice cream.

(71 posts)On Saturday evening I made hot dogs for my wife and daughter wrapped with Pillsbury crescent rolls. Fast, easy, and it made them happy. For myself I threw together a soup: about half a package of frozen corn, steamed; a can of pinto beans, drained; a can of diced tomatoes, undrained; some chicken broth and a little over half a cup of rice. I simmered this for about 45 minutes, adding a couple teaspoonfuls of cumin and a teaspoonful of chili powder, and dug in. I mixed some Mexican cheese and crushed Doritos in the bowl.
Nice. Tasty soup with a taco-ish flavor. I tried to get my daughter to try it but failed over and over. So since I'm working tonight I brought it with me, and I'm microwaving it as I write.

(848 posts)Peeled medium sliced sweet potatoes, cauliflower florets, chopped green bell pepper, chopped celery, chopped onion and minced garlic. Toss with olive oil, oregano, hot pepper flacks, and a can of drained garbanzo beans in a lg mixing bowl. Pour into a 9x13 inch baking pan sprayed with olive oil. Bake uncovered at 400 degrees for 60 minutes. 15 minutes before done, toss on some sliced mushrooms. When done, stir everything and enjoy!

(5,113 posts)It was a long day at work so I went easy on dinner prep. Stirred together sesame oil, soy sauce and a little sriracha in baking dish. Seasoned the salmon with salt, pepper, garlic powder, powdered ginger, and a sprinkle of brown sugar. Drizzle of sesame oil on top, popped it in the oven. Jasmine rice in the rice cooker, and I'll sauté some frozen stir-fry veg real quick when the fish is done (snap peas, red bell pepper, squash, carrot, broccoli, green beans- love this mix). I'm hungry and tired. 10 min left on the oven timer.
Hot tea to drink.
No dessert tonight. Hopefully I'll be asleep before dessert/midnight snack time arrives.
