I made up a quiickie soup for tonight, as I have to teach until late. It has pinto beans, Italian hot turkey sausage, diced up, Swiss chard, onions, a few chickpeas, oregano, broccoli. Wonton strips for crunchiness.
Salad is all ready to go, which is arugula and red tip lettuce with French dressing.
Jalapeno cheddar cheese bagel half, toasted.
Dessert: small cup of espresso chip chocolate ice cream and cold coffee. It's 81 here today!

(22,850 posts)The Landlady is cleaning out the rashers and found a container of her chicken broth. She also found the shrimp and pork dumplings she made a while back. With some chopped carrots, celery and onions well have a nice soup. Ill probably make a salad, too.

(788 posts)Romaine and Boston bib lettuce, thinly sliced cabbage and radish, cherry tomatoes, black olives, sliced pickled beets, few slices of avocado, and fresh sliced mushrooms. Chopped smoked tofu on top for protein. Homemade Dr. Fuhrmans walnut-balsamic dressing (balsamic vinegar, walnuts, dates, mustard, garlic powder, oregano). Toasted baguette slices with pine nut hummus. Iced green tea.

Finished off a sub, then fried Plantain..
If youve never eaten them, they are quite tasty. They are starchy when unripe, and not as sweet as their cousin, bananas.
I waited until it was mostly black, then peeled and sliced it. I then fried it in butter. If you use salted butter test them to see if more salt is needed.
I fry them until they get browned a bit.

(6,318 posts)Soaked the beans overnight and put them in with a whole potato, half an onion not chopped and garlic.
Later the onion and potato came out and were blended with half a can of roasted tomatoes and bean broth. All that went back into the soup pot and I added salt and other spices to finish. Looks like bean with bacon soup (no bacon) nice creamy broth.
Also making ranch chicken thighs.
Seared thighs topped with mayo and panko and finished in the oven. They are almost done and smells great I here.

(37,743 posts)I was only amused when I read your first 2 paragraphs, but then you got into ranch chicken thighs! When I was cooking earlier, I was thinking how much I'd like to have some ranch chicken thighs.. I recalled being in the store, seeing a ranch envelope, and thinking it would be good idea to have around. I didn't buy it, though, because I thought i might still have one.
And also I was going to dip them in mayo before cooking them.

(37,743 posts)Seriously, though, over the years, I've noticed that sometimes everyone who posts might have made chicken of some sort for dinner.
Galileo, who still posts here, would often make the same thing I did or vice versa. Then he quit posting like he used to but now he's back.
After a while, people "tune in" to each other, not necessarily consciously, but unconsciously. I think that could be true of this group.

Earl Grey tea.
Strawberry Poptart and more tea for dessert.
Lazy day off. Finally got my work clothes into the washing machine at almost midnight.
