What's for Dinner, Sat., Oct. 26, 2024

Posting early due to working late. We're closing up some of the beds in the garden today, but just for the people who wanted to do summer planting only. Lots of people are still doing broccoli, lettuces, etc.

I'm doing cauliflower fried rice with pineapple tonight.

Kombucha is cherry.

Dessert: Columbian coffee ice cream with espresso-chocolate chips.

I just ate breakfast!! Lol.
My dinner tonight is planned, will be, a sub, on my new panini grill, ham turkey, gouda, and sharp cheddar,, desert, will be a rum.

I roasted a butternut squash and a potato, had some of the gold rush chicken.

Had some ice cream for dessert.

5. Falafel wraps

Homemade oven baked falafels pressed into Joseph’s lavash flat bread spread with red pepper hummus. Add sliced tomatoes, red onion and whole romaine leaves. Drizzle with tahini and roll up tightly. Fresh sliced cucumbers and red onions mixed with vegan mayonnaise and dill as a side.
Vegan pumpkin bread for desert. Fresh iced green tea to wash it all down. Cheers!🥂

6. I'm making another casserole.

In a Dutch oven:
Layer of yellow potato slices, sliced yellow onion, black pepper and a few dots of bacon fat
Layer of thinly sliced cabbage and small chunks of hot Italian sausage and apple slices, dried thyme.
Another layer of cabbage, onion, sausage bits, pepper, fat, apple slices.
Splashed with a cup of white wine and into a 350 degree oven for 2 hours.

Serving will occur at game time for the Yankees vs Dodgers, with either a craft beer (Rare Vos by Ommegang) or an ordinary red wine.

Yum! Play ball!

7. Bumbling first attempt at crepes

they tasted fine but darned if I can figure out the right way to flip them. Finally tried a two skillet solution (cook bottom in one skillet, cover with second skillet, flip) which was awkward but it worked. Filled these with spinach and mushrooms in a cheese sauce. Side was marinated cherry tomatoes. Wine was a California Sauvignon Blanc. My son said, it was "more squeezing than juice" but I've always wanted to try making crepes and it all came out good. My mood would be even better had my alma mater won their homecoming football game, but my son's alma mater won theirs, also homecoming, comfortably, so there's that.

So Loretta and I went and I can say everything we ate was very good. The deserts were my favorite.

Lump crab meat, soft breadcrumbs, Dijon mustard, lemon juice, Worcestershire sauce, egg yolks and whites, coated with fine breadcrumbs.

First time and they came out tasty and light, perfect.

Served with green beans almondine.
