What's for Dinner, Tues., Oct. 29, 2024

Asparagus and crispy tofu cubes in spicy orange sauce over couscous. Also has cashews and lemongrass; sesame seeds over the top.

Cherry kombucha.

Dessert: Puff pastry and goat cheese with raspberry jam.

2. Tuna melt wraps

You know I can't help tweaking a recipe. I tried the pizza wrap last week, and could live on them So trying to be the adult, today, I heated a skillet, tossed in some grated Mexican blend cheese, about 1/4 can of tuna in water, drained, and topped it with a cold burrito shell, lightly brushed the top with olive oil. In a few minutes, I flipped the whole thing, let the shell crisp, removed it to a plate and rolled it. I made two, and used a little ranch dressing for dipping. Pretty good. Very easy

6. Leftover Spicy Red Lentil Veggie Soup

Made a large batch 2 days ago and expect it to be even tastier after the flavors have marinated nicely. Will also have toasted sprouted grain bread with Miyoko’s cultured dairy free “butter”. For dessert we will finish the banana bread I also made 2 days ago.
Hey NJCher, that asparagus dish is right up my alley. Sounds delish!

7. Baked Salmon

Mom came over for tea today and brought me a box of quinoa. I guess Dad ordered a couple of boxes and ended up not liking it. I’ve had good, cold quinoa salads before but have never cooked it, myself.

Going to try a lemon-honey-garlic and fresh basil vinaigrette (adjusted from an online recipe according to what I have) and dress it while hot. Doing the salmon plain, just salt, pepper, and a drizzle of oil (or maybe a mayo coat, instead, haven’t decided), and my beloved frozen stir fry veggie mix with some sautéed onion and garlic.

Dad also sent a bag of Halloween candy, so a couple fun-sized Kit Kats and Reeses for dessert!

Hot tea to drink. Red Rose.

Cheddar and ham with diced onion, Cubanelle pepper. It's in the oven now and smells pretty terrific!

Oops! I posted in Monday. So, I self-deleted and reposted here.


The quiche did indeed turn out to be delicious. There was one optional ingredient in the recipe that I am glad I added. It called for optional Dijon mustard, only a tablespoon but it added a nice little zing to every bite.

Here's the recipe for anyone interested:

Easy Ham and Cheese Quiche

Course: Breakfast / Cuisine: American
Ingredients
6 eggs
1 cup half & half (or whole milk)
1/2 tsp salt
1/4 tsp black pepper
1/4 teaspoon onion powder
1 tablespoon Dijon mustard, optional
1 cup diced ham
1 cup shredded cheddar cheese, divided
1/2 cup shredded Swiss cheese
1 9-inch frozen pie crust, deep dish
Instructions
Servings
8 servings
Prep time
10 minutes
Cooking time
45 minutes
1 Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) with a baking tray on the center rack.
In a large mixing bowl, whisk the eggs for 20-30 seconds. Add the half and half, salt, pepper, onion powder, and
mustard (if using). Whisk until blended.

Stir the diced ham, 3/4 cup of cheddar cheese, and all of the Swiss cheese into the egg mixture. Pour the filling into
the empty pie crust and sprinkle the remaining cheddar cheese over the top.

Carefully place the quiche onto the hot baking tray. Bake for 40-45 minutes or until the quiche is set and the top is
golden brown.

Remove the baking tray from the oven and let the quiche cool for 10-15 minutes. Serve warm, at room temperature, or
cold.
