Mom's recipe, no knead.

You let it rise for an hour and keeping punching it down every 10 min, then gently roll it out and roll it up jelly roll-style, then let the loaves rise for another 30 min.

It's fun to experiment with: different spices and fresh herbs sprinkled on before the jelly rolling part. One cup of whole grain flour subbed in for a cup of the white flour gives a great texture!
