What's for Dinner, Sun., Nov. 17, 2024

Angel hair pasta with fresh tomato sauce and shrimp. The shrimp are wrapped and cooked in turkey bacon. I'm also using a little coriander and mascarpone.

Cherry kombucha.

Dessert: slice of angel food cake and blackberries with whipped cream.

As for me, borscht using the last of my (few) beets from the garden.
Cheesy potato puffs made from leftover mashed potatoes also from the garden.

Sorry for the humble brag about my garden, but this is the first garden I've had in quite a few years.

Shrimp cocktails: two boiled jumbo shrimp apiece on lettuce with minced red onion, lemon and cocktail sauce and oyster crackers.

Filets of sole (floured and seasoned) sautéed in butter and wine with a small handful of capers thrown in at the end. Served with roasted potatoes and steamed green beans.

Freshly baked banana bread with butter and brandy for dessert.

Hoping the Bills beat the Chiefs. Homemade whole wheat crust encrusted with sesame seeds at the edges. Topped with homemade marinara, vegan mozzarella, air fried breaded eggplant, shredded escarole, thinly sliced mushrooms and red onion. Big splash of oregano before baking. Going in the 430 degree oven soon. Think I might have a beer. Cheers! 🍻

Today has been clear out the fridge and get ready for tomorrow's market trip.

I'm having a salad with artichoke hearts sliced in quarters, quartered cherry tomatoes, and diced Cubanelle peppers with some minced garlic, oregano, salt and pepper in olive oil and apple cider vinegar.

While that's marinating in the fridge I'm going to heat up the sweet potatoes that I cooked yesterday. I'll have them with butter and salt.

If I'm still hungry after that I'll dig out some of my squash and sweet onions that I cooked in butter and froze.

Beverages are whole milk over ice and ice water.

I might have a piece of sweet potato pie later. Or maybe, I'll have a mug of heated cranberry juice which I drink as a replacement for the tea I can't drink anymore on doctor's orders.
