It's a cold, grey day in northern NJ.

So, I'm cleaning out the frig and making turkey bone broth.

It's simmering on the stove right now.

1. I made 6 quarts of bone brothfrom this year's carcass. In the freezer already.

I'll get the same from the Christmas bird and, I usually run out by Memorial Day.

But making bone broth is best done on cold grey miserable days. It's a spell you cast against the world's shittiness.

Not to mention - The warmth of a big stock pot simmering for hours warms the house and the heart.
