What's for Dinner, Mon., Dec. 9, 2024

I haven't gotten a damn thing done because of them catching the shooter. Reading, reading, reading. Interesting shooter. Consequently no lengthy food preparation tonight.

I do have some chicken cordon bleu, so I will fix that. It's already prepared.

Side dish: lemon-spicy cashew quinoa. A few Brussels sprouts.

Ginger turmeric kombucha.

Dessert: a square of an interesting looking chocolate bar that I found at the store this morning: black forest cake cherry-flavored chocolate and cookie pieces.

The trouble with these domestic chocolate bars is they don't compare with the ones the RG sends me from Italy. Not even close.

on edit: just re-read this and realize how strange it is that some of us in the US now classify our shooters as "interesting." WTH?!

A guilty pleasure for me is Campbell vegetarian vegetable soup, so that is tonight dinner, served with garlic texas toast and hit decafe tea.


Edited, I am trying to limit my sodium intake & commercial soups can be pretty high. I realized that I could make this soup from scratch with alphabet pasta in my tomato soup base. with minimal salt.

3. Asparagus Tofu Scramble

Steam-fry in evoo and veggie broth: sliced carrots, chopped red bell pepper, onions and garlic. When soft add cut asparagus and sliced mushrooms. Add 1/2 block of mashed tofu, 3T Jax tofu scramble and 2T Penzy’s Sunny Paris seasoning. Top with crumbled Morning Star bacon and vegan Parmesan. Cheers! 🥂

Made them into some baked burritos with ground beef and cheese. A verde enchilada sauce over top.

Was a small pan of burritos but still have some left. Will freeze the excess beans and taco meat.
