Roasted Pumpkin risotto for dinner

Did roasted pumpkin risotto tonight with a salad to start.
Roasted a half pumpkin earlier.
I read and article on risotto and now have a list to try. I'm going to have to lay in a stock of rice...
Next on the list for Monday will be
Risotto all'Amaroe. This uses a strong red wine. This should be interesting
Risi e Bisi, with peas. Should be a spring dish using freshly hulled peas. I'll temp the gods and use frozen.
Risitto alla Milanese. With safron. seems pretty straight forward but gets a golden colour from the safron.

Has anyone tried these? If so any suggestions.
Any risotto suggestions? other than mushroom?

with butternut squash - very similar to pumpkin: canned pumpkin puree is a similar squash variety. If you have access to fresh sage leaves, frying them makes a nice garnish.

Mushroom risotto is my standby. I've made risotto with squash blossoms, which turned out very nice, but my squash plants have been uncooperative in recent years. Seafood risottos are also good - flaked fish, frozen shrimp, crab, or scallops, or a mix.

I keep forgetting about it until I see it in restaurants. I can get some nice frozen packets that I make seafood chowder with occasionally.
