Meatballs in tomato sauce. I use ricotta cheese in mine; so good!

(10,453 posts)tomato/cucumber/pepper salad, lima beans. Lots of leftovers for the week. I had a hunk of pound cake in the freezer, so I thawed it and served with a sauce I made from fresh pineapple, brown sugar and rum. It was awesome and tasted a bit like pineapple upside down cake.
ETA: those meatballs sound delicious. Will have to try making them with ricotta.

(2,681 posts)Working on a quilt, so I was upstairs sewing and didn't want make anything that needed close watching. Made pork covered in corn cut off the cob and sliced onion. Added a little season salt, pepper and a few shakes of Worcestershire sauce. Baked at 350 degrees, in shallow baking dish covered in foil, for about one hour. Smelled so good when it was baking. Serve with baked sweet potatoes and a big salad. Too full for Super Bowl snacks right now, but I have the makings for nachos just in case.

(3,504 posts)with a big salad: romaine, cherry tomatoes, cukes, carrots and onions. The big choice is between ranch, Cesar, or balsamic vinaigrette. Strawberries and yogurt for dessert.
