I've heard you can sand it/buff it down and apply a heat-resistant appliance paint, but that may not last a whole lot longer than the original finish.

Not having any paint on the roof of the machine wouldn't affect the quality of the food and any guests who feel compelled to snoop inside kitchen appliances are never asked to come back.

You just don't want any of it in the food during the peeling process.
