on Bill Graham's houseboat. Otis Redding (and backed up by Steve Cropper) had just finished up at the '67 Monterey Pop Festival and Graham was able to book him for a gig in SF the following weekend and offered the houseboat to Redding and Cropper.

As to your specific question, I'd hazard a guess and say Isaac Hayes. Curiously, Cropper recruited Isaac Hayes to replace the college bound Booker T. as a Stax session keyboardist. Possible the smartest thing Cropper ever did was pairing Hayes and Porter together and setting them loose.

Side note: Stuart Brand (Whole Earth Catalog) purchased the table that Otis Redding purportedly wrote "The Dock of the Bay" on from a reputable Sausalito antique store owned by Julia Child's sister (She was about a half an inch taller then Julia).
