There are recipes for various kinds of cookies using canned chick peas as the dough. I made chocolate chip cookie ones for family during a holiday and didn't tell them, and they liked them.

If you find a recipe that you like, but it has ine ingredient on it she can't have - like oat flour - Google substitutions for it.
