5. High quality dark chocolate does not

Milk chocolate...yeah, that definitely is as advertised. And the cheap-ass dark chocolate you see in a lot of stores can contain dairy. But if you get into the $15-$20/pound professional couverture like Callebaut and Valrhona, those are dairy free.

So the next question is, if I went that way would I really want to spend $30 to $40 - because you basically need a full kilo of chocolate to work with it - on just this part of the project?
