2. Great way to sneak vegetables into someone's diet

I like to go with potatoes in lieu of rice, seasoned up with salt, pepper, garlic powder, maybe some smoked paprika to give off a bacon viibe. Hash browns, tater tots, leftover baked potatoes fried to crisp up a little, I've been known to use leftover French fries. And cook up bell pepper, onion, and whatever needs to be used up - the last couple mushrooms, a chunk of zucchini, leftover broccoli, maybe throw cumin and oregano in, and scramble eggs with that. Tortillas, cheese, salsa, I'm happy. Of course that's maybe more work than you have time for some mornings, but not too bad working with leftovers
