Cotton absorbs. Poly not so much. In the 70s when they first began to replace cotton with poly, there was an effort to weave cotton into the surface of the towels to promote absorption.

TBH I don't know much about modern contemporary towels because I have a closet full of the cotton ones. Old towels fetch premium on eBay, just like thick 1980s cotton sheets.
