What's for Dinner, Wed., May 31, 2023 [View all]

I'm making a frittata: "Tuscan Chickpea Frittata." It's a mix from one of the RG's Italian import clients. It is low glycemic; one would think it would have eggs in it, but it doesn't.

To go on it, I'm using greens from the garden, like turnip and radish greens, broccoli microgreens, spinach,arugula, beet greens, and whatever else looks good. For that part I intend to use this new cookbook I got from the library called 366 Healthful Ways to Cook Leafy Greens. I'm going to thaw some shrimp to possibly put on top.

Maybe grated cheese.

This is a partial admission of failure on my turnips. Many of them have bolted and I doubt there is much of a root there. Really disappointed because I love turnips.

Dessert: mango mochi and Earl Grey tea.
